Cooking with ham hocks for the first time. Any tips?

I can't find any triple smoked ham, so I am taking the butcher's recommendations & using ham hocks to make navy bean soup.

Will the he enough meat off of 3 or should I add some ham at the end?

Do they make the soup greasy?

Any tips?
