Cooking on an Induction Cooktop

We just finished an extensive kitchen remodel, complete with new appliances.

I treated myself to a Thermador Induction Cooktop and cannot find "recommended" pans to buy. Yes, stainless steel is the recommended content. The Le Creuset I already own is useful but I find no faster than cooking on my old electric burners. Also, they leave the induction burner quite hot, instead of cool.

There are lots of brands available but would appreciate knowng if anyone is using a type of cookware that they feel is fantastic.

I prefer good stainless such as All-Clad.  Cast iron will never heat or cook quickly as it is very inefficient cookware (even with inducstion).  Cast iron takes a long time to heat up, but it will maintain heat, so it is great for stewing, braising, or even deep frying, but for quick searing or sauteeing, you cannot beat high-quality stainless.

When I got my induction stovetop (which I love) I was told to take a magnet with me to the store and try different pans to see if the magnet would stick on the bottom.  The stronger the bond of the magnet, the better it would work on the stove.  I had many Cooks Essentials stainless pans from QVC which actually work the best.  A small saucepan of water will boil in less than a minute with the Cooks Essential pan and I can touch the burner afterward.  Many pans will have the small illustrations on the bottom to indicate induction also.  I hope you enjoy your stovetop!

I've had equally good luck with inexpensive Wearever Cook & Strain (Amazon) SS and love my Wolfgang Puck (other channel) Bistro Elite 13 piece SS. 

 

I envy you your cooktop, I'm on my second portable one (have one of those dreaded glasstop stoves that are notorious for heating unevenly).  Someday....!

All-Clad has a new line of cookware especially made for induction cooking.  It is great and affordable.  I've purchased several pieces from Williams-Sonoma.  Enjoy your new kitchen.

Kitchenaid pots and pans are made for induction.  They are aluminum with SS bottom.  Ming's pans on HSN are as well.
