I'm lucky that he either eats at the office or goes to one of the restaurants where he knows the people.  He does them favors and they give him food.  Smiley Happy

 

For me, unless I'm making a batch of something (then it will last days or more), I just do something simple, microwaved Lean Cuisine type, or a KIND bar (love the almond coconut one!).

 

Today's lunch (lunch is my dinner and I eat very little at night) was one of the Lean Cuisine bowls.  When I first saw this one I knew I'd like it.  It has chicken, brown rice, green beans, and cashews.  What's not to like, right?

 

Wrong!  It had absolutely no flavor but I had a feeling that it was redeemable, so I bought another one next time and decide to hit it with some soy sauce.  Perfection!  Smiley Happy  Now it's one of my favs.

Over 95 degrees here today in Philly!  I like salads when it is very hot. I ate salad twice today--lunch and dinner!

 

We went out to dinner at Olive Garden--nicely air conditioned, had a great salad and pasta dinner, and picked up some economic pasta dinners to take home as well. (They are special purchase for only $6.00 each--called eat in AND take out!)

It hit 90 here in NW PA yesterday...but there was a really nice breeze all day ( I live on a ridge...the breeze is wonderful when it's spring summer or fall, brutal when it's zero in winter and the snow only falls...horizontally!!!!)

 

I made sausage and peppers. It was good and haven't had in a long time, and there's some left for today. Nice here this morning...the heat wave broke last night with a cold front,,and rain.... 68 and cool today, and tonight supposed to be in the FORTIES!!!

 

 

Still too chilly for my little tomato, cuke and zuke seedlings to go out!!!

Honestly, the weather doesn't really impact what I choose to cook.  Our home temperature is consistent whether it's sweltering or the frozen tundra outside.  I think there's a seasonal expectation that soups, stews, pot roasts, and casseroles are more falls/winter meals and burgers, steaks, and big salads are more for spring/summer.  Not at our house.  We eat our larger meal of the day at noon and we eat what we feel like year round.  The only exception might be if we have been outdoors all morning in the heat and just didn't have much of an appetite for a large meal, in which case we'd just pick from random simple things that are readily available - hard boiled eggs, cheese, salami, deli ham or turkey, certain veggies w/dip, low carb yogurt, keto granola, etc.

I live in GA and we've been in the 80's for some time now and not transitioning into our usual 90's and higher temps for summer.  Husband has already been in the pool a couple of times after working on the yard.  Have been using AC for a couple of weeks, everyone has.  Tonight I'm making spaghetti with meat sauce.  The meat sauce will cook all day in crock pot.  There's no way around for me not using my stove or oven with what my family will and will not eat.

Last year at the end of June--the PNW--for me in WA state, there was a heat dome that lasted a few days--temps were at and over 108* for the weekend and then took several days to cool back down to the 70's, but we knew it was coming so I made salads-- spud,pasta, green and cooked chicken and got deli stuff for sammies and also cut up fruit.We snacked pretty much thru it all. Had ice made even for the cat for her bed----was really too hot to eat much tho!!
