I plan on preparing cookie dough today with the intention of baking them next week. How long can I keep premade cookie dough in the refrigerator?

It should be ok for about 3-5 days.  Any longer I would put it in the freezer.

realistically

roll in a ball and wrap tightly in wrap

 

 

should be fine next week,

 I'd follow guidelines on  how long  raw egg not in the shell  is recommend to be stored in fridge. I remember reading it has a very short shelf life - 2 days  . I saw that info in regard to  a lasagna recipe  containing raw eggs mixed with ricotta cheese.
