Cook's Essentials Bread Machine

I just acquired this machine and am having a difficult time regulating the outcome.

The first loaf I made had to be tossed as I didn't seat the large pan properly and the paddles never connected.

The second loaf was a recipe with 3 cups of flour and it said ti was for 1.5# loaf. It came out looking like Frankenstein baked it! Hard crust, too dark, though I had it on medium.

My third loaf is in the machine right now. I read somewhere that flour is more or less absorbent according to the air around it. I added about 1/4 cup more milk during the kneading cycle.

How do you get the dough to spread out and fill the pan before it starts to rise?

I also says the kneading cycle is 3 minutes but the machine went on MUCH longer than that. Does the kneading continue even while the dough is in the rise cycle?

I really need help here. I'm a complete newbie when using this machine and bread baking in general!

Wish my media programs were working, I cannot transfer pics from my camera card to my computer. I'm sure a pic would be "worth a thousand words"!
