I've never been a real fish person. The last year or so, I've finally gotten used to eating Alaskan wild caught coho salmon. I can't say I ever crave it, but I know I should eat it so I do. Now I'm ready to venture out to trying cod. I used to eat battered and deep fried sometimes but that's not an option anymore. I saw a recipe that I want to try. My question is should I choose "plain" cod or black cod? The milder the better.

Sablefish is milder tasting than most cod fish.
ETA-
Sablefish has a softer texture than cod, not a firm fish. It's also a bit more oily due to a higher fatty acid content.

I find Pacific cod to be milder and sablefish more buttery. Tilapia is quite mild.

There is US farm-raised tilapia.

I would never even consider eating tilapia.
Wild caught cod is very mild. We get it frozen at Costco. I recently bought the black cod and it is still in my freezer. We have not tried it yet.

i dont like tilapia at all.
i LOVE cod (never seen it called black cod though), halibut, rockfish, orange roughy, and flounder. all mild fish with different textures.

Black cod -sablefish- is not actually in the cod family.

QVC Anderson haddock is the best - dinner last night. Flakes, sweet & no bones. Baked 400 for 20 miins. Butter on top = golden brown.
No cod for me, texture very dense = really >chew-able

Sablefish popularity came from Japanese cuisine. My Japanese mother used to buy the fish at an Asian market here locally and make tempura fish strips served with soy sauce and wasabi...delicious!
