I LOVE chilaquiles, and was wondering if anyone makes them at home. I have an easy recipe, but it calls for shredded chicken. I'd like to make a more "breakfasty" dish, so thought of substituting thinly sliced ham or crumbled sausage or chorizo.
For some reason I can't get too thrilled about chicken for breakfast! I might just leave the meat element out and add some peppers or more cheese.
Anyone have any suggestions?
