Re: Chili and Sweet Cornbread on the Menu Tonight

@KingstonsMom  Here's the recipe.  This is a Taste of Home recipe, so I will put her ingredients and my changes.

1 broiler/fryer chicken, about 3 to 4 pounds (I use chicken breasts, since that is what I have)

1 can (14 oz) whole berry cranberry sauce

1 cup barbecue sauce (I use Head Country Apple Habanero)

1 small onion, finely chopped

1 celery rib, finely chopped

1/2 tsp salt (I do not measure)

1/4 tsp pepper (I do not measure, but use a lot since that is how we like it)

Place chicken in crock pot (I usually brown the chicken first, if I have time).

In a bowl, combine cranberry sauce, barbecue sauce, onion, celery, salt, and pepper.  Pour over chicken.  Cover and cook on low for 5-6 hours.

The next time that I hear salt and ice together, it better be in a margarita!

Cornbread with honey butter is awesome too!

@SXMGirl

Thank you, sounds yum!

I love Taste of Home recipes.

I may have a challenge finding apple bar-b-q sauce, but I'm pretty good at improv when I need to!

And it's a dish that gets better and better, every time you reheat it!

@KingstonsMom  Experiment with different bbq sauces, which is what I do.  My local grocery does not always have basics, but they always have a great selection of sauces--go figure!

It was a chili and cornbread night for us too last night. In North GA it has been cold since Halloween and I am loving it!

I use Bush's chili beans in my chili, havent used the powder for years. My Mom always had chili on a friday night, and it was always ladeled over mash potatoes. That's the way I fix it too.
