Hi, I have searched all over this site for todays recipe that was cheesy chicken casserole. Does anyone know where it can be found. She said it was on this site but I am not having any luck. I found one under temptations but it is not the one they were talking about because it already has some ingredients she mentioned that she just added because she had it left over. Please help me find it. Thank you

CHEESY CHICKEN CASSEROLE

Filling

3 cups dry wild rice

6 cups water

3 pounds boneless skinless chicken breasts

3 Tablespoons extra virgin olive oil

2 medium onions, finely chopped

5 stalks celery, finely sliced

4 carrots, peeled and finely sliced

2 Tablespoons fresh minced garlic

1 teaspoon kosher salt

½ teaspoon black pepper

Sauce

½ cup butter

½ cup flour

½ teaspoon kosher salt

½ teaspoon pepper

3 cups chicken broth

6 cups shredded cheddar cheese

  1. Place wild rice and water in a 3 quart microwave safe bowl. Cover with a damp paper towel and cook in the microwave for 25 minutes. Let stand 5 minutes and then *f*l*u*f*f with a fork. Set aside.
  2. Meanwhile fill a pot with 2 quarts of water and bring to a boil. Cut chicken breasts in half vertically and carefully place in water. Boil uncovered for 15 minutes or until cooked through. Drain water, cut into cubes and set aside.
  3. Add olive oil to the same pot and set to medium-high heat. Stir in onion, celery and carrots. Cover pot and cook for 9 minutes, stirring occasionally. Stir in garlic and cook for 1 more minute. Remove from heat and stir in chicken, rice, salt and pepper. Transfer to your temp-tations 13"Ă—9" baker.
  4. Preheat oven to 350 degrees.
  5. To prepare cheese sauce, melt butter in a medium saucepan over medium-high heat. Whisk in flour, salt and pepper. Slowly pour in chicken broth whisking continuously. Bring to a boil and then reduce heat to medium, continuing to whisk. Whisk in 4 cups of cheese until melted and sauce is smooth. Pour cheese sauce over chicken mixture. Mix well.
  6. Top with remaining cheese and bake for 25 – 30 minutes or until cheese is melted through. Serve hot.

Saw a small section of this when I was passing by the TV and saw it being presented. The casserole looked great! Thanks, denisemb for posting the recipe!

You're welcome! Had to look it up after David raved about it. I believe the vendor (not Tara, the other lady) said she added leftover broccoli and something else. I'm just not sure about 6 cups of cheese (and I'm a cheese-aholic!) {#emotions_dlg.laugh}

yes it was during the presentation for K39348~ David realllly liked it. I'm thinking of making this for dinner tonight Broccoli

lol..that's all I remember about the casserole..all the cheese when David dug into it! First thought was , man, that's a lot of cheese!! I turned the channel right after that so didn't watch the entire presentation.
