I know these either need to be eaten, stored in refrigerator or fairly quickly put in freezer.  My question is:  can they be refrozen after being in the freezer?  If I were to freeze the cookies and take out to use in Christmas stockings, wondering how long the recipients would have to eat them before needing to refreeze?  Doubt that would be a problem, but just wondering.

My thoughts are the only reason freezing or refrigeration is mentioned is because of the icing.  The cookie itself is stable, but you can't let an iced cookie like this sit out for weeks at a time.  

If you want to keep the cookie long term, freeze it.  If you're going to eat it this week, put it in the refrigerator.  Not going to be a big deal to put this sealed cookie back in the freezer.
