I just came across this recipe and am entering it in my holiday files so thought I'd share it here, too. It reminds me of those very rich sweet Southern vegetable pies that we often see, something very reminiscent of holiday dishes in the South.

Carrot Casserole

2 lb carrots, cooked and drained
2 sticks butter
2 c sugar
6 eggs
2 t baking powder
6 T flour
2 t vanilla

Combine carrots and butter in blender or processor. Combine flour and baking powder, then mix all ingredients in mixer. Pour into large baking dish, and bake at 350 deg F for 45 min to 1 hour.

This recipe comes from my husband’s family in Louisiana and truly belongs among the ‘comfort foods’ of the Deep South It’s rich and luxurious (and fattening!) and we enjoy it as a holiday dish at Thanksgiving and Christmas. Serves 8

I love carrots. Is this similar to a pudding? The 2 sticks of butter really scares me, along with the 6 eggs.....I'm afraid I might die of a heart attack after eating this.....but it is so tempting. Have you experimented with any other ingredients in an attempt to cut the fat? Just wondering. I'd love to try this.....

This sounds wonderful. I am always looking for different holiday recipes for veggies. I get tired of my old standbys. I think the family will love this. Thank You

Wow, that is rich. I'm not even sure carrot cake would use two sticks of butter, two cups of sugar and a half-dozen eggs. I like veggies very simple--not overcooked with a little butter.

I realize this is an "Old School Southern" recipe, but zeezers....2 sticks butter?
