UPS delivered mine at the beginning of the week.  I was distracted and just did what the box said, refrigerate upon receipt.  Well, now that several days have passed I realize I should have taken the time to put it into the basement freezer.  There are only two of us and I'd like to spread out the treats.

The Jr's website states it can be refrozen & can be left in refrigerator for up to 7 days...read the FAQ on their website.

I rewrap my cheesecake in plastic wrap by the slice.  Then it is easy go just grab a slice or two and thaw it out as needed.

I have heard the vendor from Juniors say you can thaw and freeze their cheesecake several times with good results, but I think once is enough.
