COOKING/BAKING SUBSTITUTIONS

If You Don't Have: 1 ounce unsweetened chocolate, substitute 3 tablespoons unsweetened cocoa powder plus 1 tablespoon cooking oil or shortening, melted. If You Don't Have: 1 tablespoon fresh herbs, substitute 1/2 to 1 teaspoon dried herbs. If You Don't Have: 1 cup half-and-half, substitute 1 tablespoon melted butter plus enough whole milk to make 1 cup. If You Don't Have: 1 cup buttermilk, substitute 1 tablespoon lemon juice or vinegar plus milk to make 1 cup (let stand 5 minutes), or 1 cup plain yogurt. If You Don't Have: 1 cup maple syrup, substitute 1/2 cup water plus 3/4 cup packed brown sugar, heated to melt sugar.
