I use it all the time for bread.  I bought one at the grocery store before I knew about King Arthur flours and baking supplies.  I now use their brand and keep it in my fridge.  Excellent quality.

If I needed buttermilk or sour milk for a recipe, I always just added 3 Tbsp vinegar to a cup of milk and let it sit 5 minutes.  To buy a powder would just be another product to buy and store.

 

I might just buy a quart of buttermilk, use what I need for cooking and drink the rest.  I love it.

@beach-mom   I always have buttermilk power on hand.  I have a cake that calls for it and I am not running to the store just for buttermilk when I decide to bake.  I have used it for years.

@Mom2Dogs does it need refrigeration? If I could store it like Bisquick, in the pantry, I'd keep some on hand. I've never heard of the powdered form.

I bought buttermilk powder maybe two years ago when there was some unexpected shortage of liquid buttermilk as one of the primary regional manufacturers was updating its bottling. I really enjoy using buttermilk in dips/dressings as well as in baking, and there truly is a difference in recipes where you want flavor rather than just a chemical reaction (i.e., the vinegarized milk hack just doesn't cut it sometimes). Anyway, the buttermilk powder seemed fine for some baking, but I was happy when the liquid version returned to shelves. I don't think I'd buy the powder again unless I wasn't able to buy the liquid, and at least for the recipes I've seen, I think I'd find a way to use the liquid instead of the powder whenever possible.

Yes, it needs to be refrigerated.  I just store it in the original container (which has the direction on how to use vs actual buttermilk).  It does not take up much space.  My container is in a drawer...and it has a long shelf life.  I would not be with out it.

Have not but after wasting so many small bottles of unused buttermilk, I now make my own when I do need it.  So simple and it works.  I believe it is a teaspoon of vinegar to 1 cup of milk.  I use 2% and it is fine.  You can google to be sure I am correct.  Haven't made it since last winter since I do not bake during the summer.

I always have regular buttermilk in the fridge. (Kate's is my brand of choice). I use it a lot in baking and it lasts around a month, so I seldom have to dump it down the drain.  I didn't know powdered buttermilk even existed.

Yikes! Thanks for the heads up. I bought a container several months ago, used it once and it's been in an airtight container in my pantry. I just checked and it's still powdery and looks fine, but since it's not the original packaging I can't check if it says "needs refrigeration".

Update: I just checked the item on Amazon and it's stated plainly.  Ooops!

A couple of FB cooks I follow have used it before when making biscuits.  They got it at Wal-mart.

 

I live in the upper midwest and I've never seen buttermilk in any grocery store on the few rare times I've tried to find it.  They probably carry it in larger cities though.
