Girls, I cooked homemade macaroni and cheese tonight and guess what else I put in it (aside from peas)??  Yep, BACON!!!!  Everyone loved it as usual!!!

Chilipepper's mac and cheese recipe feeds about 16 or more people, so the cheese total isn't as overwhelming as it looks.  Note at the beginning of the recipe, it calls for 2 pounds (2#) of pasta.  Looks awful good.

Oh, it isn't the amount of cheeses and richness, it's the price, LOL.  I was going to purchase some gruyere for my french onion soup and it was $12.99 for a small block...maybe Santa will bring some in my stocking.

 

I love mac and cheese, but don't cook for crowds anymore, so I'll just have to dream about it. Smiley Happy

This is actually how I first had it-as a hash brown casserole at a friend's house, without the bacon.

 

It was so good that I asked her for the recipe, and she gave it to me, and it was very similar to Honny's recipe.

 

It used frozen-but thawed hash browns-I think, instead of tator tots, but if I recall, everything else in the recipe was quite similar.

 

Anyway, enjoy it, for those who make it! It's really decadent, and very good! Smiley Happy

Those shrimp and grits sure are good!  We just had an overly salty ham, BBQ chicken, pulled pork, potato salad, baked beans, and cake at work.  It wasn't a very holiday meal but is was a work shin dig so we all went.

 

I would make some adaptations, fry up one to two pounds of thick cut, hickory smoked bacon extra crispy, drain all but a few spoonfuls of the fat, caramelized the onions and add the peppers to reduce and get flavor, then put that on bottom with a layer of bacon then the rest.  I would do bit of  butter since my gal bladder doesn't like greasy foods with that much grease in it.....bummer for me.  It all sounds so yummy for a once in a while treat, even in small amounts, as MODERATION is all about.  I also love that mac and cheese recipe above.  Talk about cheesy.  I'm just doing some with white Vermont, extra sharp cheddar and black pepper.


 

Tigriss, last year the Maintenance department hosted the Christmas party.  First, our maintenance department is huge and the guys all love food.  Talk about a house of sin: deer chili, curry chicken, homemade breads, fried turkeys, smoked oysters, lasagna, macaroni and cheese, loaded mashed potatoes, green bean casserole, Turkish potato salad, just to start.  People came in early the next day for leftovers.

 

Thank you for the suggestions on the dish.  Four slices of bacon didn't do anything but provide the grease.  I love the idea of carmelizing the onions!  Next year, I'm getting a pound of bacon just for this dish.

 I like a lesson on nutrition any time I can get one.  I have learned a lot reading these boards since the beginning and I have learned a lot from people who know things I don't know, think differently, or encourage others to try new things.

 

I don't come here to take sides or be a cheerleader for a cause such as fatty foods.  I come here as do I think most of us to have a discussion and broaden our horizons.   I hope people don't hesitate to express their opinions, but always in a nice way. Don't you come here to learn something new or to find out if you are in the majority or minority of opinions?  Isn't it all good and all an exchange of ideas?
