With all the talk about buttermilk I thought I would submit a recipe of mine that uses buttermilk in a chilled salad.   I happen to think is is very good.  Hope you do, too.

 

 

ORANGE BUTTERMILK SALAD

 

 

1 (20 ounce) can crushed pineapple, undrained

3 Tbsp. white sugar

1 (6 ounce) pkg orange flavored Jello

2 cups buttermilk 

1 (8 ounce) container frozen whipped topping, thawed

 

 

1. Mix pineapple and sugar together in a medium saucepan and bring to a low boil, stirring occasionally until completely disolved, remove from heat and cool to room temperature.  Add buttermilk and refrigerate 1 hour or until partially set.

 

2. Gently fold in whipped topping.  Pour mixture in a lightly oiled gelatin mold.  Refrigerate 8 hours or until completely set.

After you boil the pineapple and sugar, you stir in the gelatin (Jello) until completely dissolved, remove from heat and cool to room temp.

 

Hope that clarifies the directions.

 

It's very easy to make and is especially good on a hot day. It's refreshing, hope you like it.

Another recipe for using buttermilk is to make a smoothie.  I put a frozen banana and some other frozen fruit (usually berries, sometimes pineapple, peaches or mango) into the blender. Add buttermilk and any sweetner if you feel you need it, and blend.  If the fruit is frozen, no ice is needed and the buttermilk makes it nice and thick and smooth.  Sometimes with the pineapple one I will add some unsweetened coconut as well.  Very filling and refreshing.

This sounds so good and refreshing and I do plan to make it. A suggestion------can you post this under Recipes as I almost missed your post and I'm sure others would love to try it and would see it under Recipes Topic.
