I'd rather have a rib eye steak, cooked medium rare. At a restaurant, I don't want it highly seasoned or marinated, just salt and pepper. Thats all. At home I'll add garlic powder. Give me a baked potato with sour cream and butter, a house salad with 1,000 Island Dressing and I'm good to go!!!
I remember going to a steak house and a lady in the booth next to me got her steak and said it wasn't rare enough for her and she wanted another steak.
My dad would have eaten his steak this way, Throw it on the grill , turn it over and put it on his plate. He wanted his real rare, no overcooked steak for him.
My hubby use to like his well burnt!! But now he eats it the way I cook it, medium rare to medium.

I like my steak cooked medium, with a nice hint of pink in the middle; baked potato with extra butter, and grilled veggies.

Medium well is my preference. Haven't had but a few of these delicious steaks since the early/mid 50s when we lived in Germany. We ate them all the time as they were super inexpensive at that time. Lived there 3 years as my Dad was stationed there - bought big slabs of them and he cut them to our preferences. Those are good memories.

For Filet I always request rare b/c at a restaurant you'll rarely get a rare slice, it skews toward medium-rare. At home I'll request Med Rare. My Dad & brother are famous for 'RARE' with blood on the plate which they'll sop up with a slice of bread.
My brother always requests rare at restaurants to which he'll say to the waitstaff, "Walk the cow through a warm kitchen, slice it and put it on my plate - we're good". Needless to say, he always, ALWAYS gets a horrified look to appear on the waiter's face! But he means it. Luckily they've never gotten sick from their steaks!!

A room temp steak seasoned with salt and pepper and Into a SCREAMING hot cast iron pan .....quick sear on each side, let sit for a few minutes and eat. Inside is raw but warm. Add sautéed mushrooms and a stuffed baked potato and grilled asparagus. To me, the perfect meal.My very least favorite cut of beef, and I LOVE beef!
