Are All Brands Of Yeast The Same?

I have never made anything with yeast, but I am going to try to make a pizza dough. I am just wondering is there a brand that you Ladies would recommend or are all of the brands basically the same.I know the recipe I have says to use  Red Star but I can't find that in my area.

I don't have that brand in my area either. Just match up the product type (regular vs rapid rise vs pizza) listed in the recipe and you'll be fine especially for something like pizza dough.

There are some differences from brand to brand, but by and large, yeast is yeast. You won't go too far wrong substituting another brand of yeast for the one called for in a recipe.

I personally like Fleischmann yeast.  One time, I was at Aldi and thought I would try their yeast.  Dummy me for not testing it to make sure it was viable.  My bread rose about half way.  Lesson learned.  I've never had a bad experience with Fleischmann.

@cuddlesmama - For pizza dough, there really won't be a difference between brands, whether you go with envelopes or jars. But if you do a lot of yeast-based baking, I highly recommend Saf yeast. It only comes in large containers, so it will seem more expensive than other brands, but when you compare the price per amount used, it's a good deal and it really does work better in my experience. I was actually surprised at that; it was recommended to me by a local bakery owner, and I figured that it made sense that it would be good for him with his high volume and specialty items, but it even makes my home baking better.

@cuddlesmama   I use yeast alot and I think Red Star and Fleischmann's are the same. I have never found a difference.

We used to have some issues with Red Star yeast Wal-Mart was selling years ago. We also tried the Platinum Red Star with no issues. Wal-Mart stopped selling it here. 

We switched to SAF instant in the red & white bag. Have not had any issues since we started using it. Better results.

DH uses it to make pizza dough in the bread machine.

I've been using Fleischman's yeast which I keep in the freezer (bulk pack from big box store). It has lasted years and I always test it before using.

 

I recently made "Grandma Pizza" using the dough recipe from King Arthur Flour. It was very interesting!

there is a difference between "active dry" and 'instant' yeast

 

that is more important than the brand in my opinion
