I've only cooked it twice, due to the cost. I cover it with some salt, pepper and garlic powder and cook it low and slow. My brother will buy a whole rib eye and cook it this way.
I do cook an eye of round at 3.99 a pound this way:
Eye of Round Roast
Preheat oven to 450* Rub roast with 2 T oil ,salt, pepper and garlic powder. Put on a sheet pan. Roast with fat side up for 10 minutes. REDUCE OVEN TEMP to 250* and cook to med-rare.(25 minutes per pound). Remove to a cutting board or platter, lightly cover with foil and let set for 15-20 minutes. Slice now or refrigerate til cold for easier slicing.
Cheaper than paying deli prices for roast beef.
Have a good day![]()

Believe me, I'm not one to cook roasts of any kind because they never turn out right but, I've used this method 3 times and it has never failed me.
Preheat oven to 500 degrees. Cook roast for 1/2 hour at 500. Lower temp to 250 and cook for 20 minutes per lb. Perfect med rare. Let it sit for approx. 1/2 hour before carving. So if you have a 4 lb. roast, cook it for 110 minutes total.
The day before cooking, I season with S&P, garlic powder, onion powder and dried thyme. Season liberally. Before putting into the oven, I leave the seasoned roast out for about 1 hour.
If there are any leftovers, they heat up beautifully.
ETA -- CORRECTED TOTAL COOKING TIME FOR A 4 LB. ROAST SHOULD HAVE READ -- COOK FOR A TOTAL OF 110 MINUTES. I CORRECTED IN MY POST ABOVE. SORRY FOR ANY INCONVENIENCE. GUESS I'd BETTER GO BACK TO SCHOOL.

We generally smoke prime rib on the Masterbuilt Smoker. We just made one a few weeks ago. We used to put Himalayan sea salt & black pepper on it. We used the recipe for the prime rib rub in Dadgum That's Good cookbook. We take it off the smoker when it's about 140°.
1/4 T Onion Powder
1/8 T Garlic Powder
1 T Black Pepper
1 T White Pepper
1 T Paprika
1 T Red Pepper
1 T Kosher Salt (we use Himalayan Sea Salt)

If you used a different pan you can add some cream of mushroom soup so you would have a nice gravy to use on the roast.
