My entire meal was some of that left over quinoa I made for the meatloaf, I cooked it in beef broth instead of water, baked potatoes in the oven with the meatloaf, and some mixed vegetables. Filling and very tasty.

I like it but my husband does not.

Always complains quinoa is sticky and annoying, especially when those small pieces get stuck in between his teeth.

My son and family are vegans. I have learned to use it instead of cucuous. I use a vegan broth and then I add vegetables that I cook separately(zucchini,peppers,mushrooms,small tomatoes and artichokes hearts). The vegetables were cooked in a large deep salute pan with any of your favorite spices with olive oil. Then I mix all together and use as a hot or cold dish. My son used quinoa in a vegan black bean burger dish. Must admit it was very good. Topped the "burger" with vegan cheese and ketchup.

Just want you all to know that I made this meatloaf again without the oatmeal in it, and it was too juicy, so when I added the fourth cup of oatmeal along with the 3/4 cup cooked quinoa, it was perfect!!!

My husband bought a bunch more quinoa now in bulk. It's really not expensive that way and this is at our food co-op.

Also - in making stir-fries - sometimes I use quinoa instead of rice. It works well.
