Forrestwolf, The red looking pork is called Red Cooked Pork or Char Siu. There are recipes or Mixes you can buy to soak and cook the pork in.
I bought a packet of mix from NOH called Chinese Barbecue Char Siu Seasoning Mix. You just add water to it. I haven't used it yet, but the picture on the front looks so good. I have seen recipes for Char Siu online.
I just love eating the Char Siu from the buffet. I think they use it in Pork Lo Mein and Fried Rice recipes.
Update: I got a pound and a half of Boston Butt, cut up, and marinating in the Char Siu mix for tomorrow. I'm going to make some Pork Lo Mein tomorrow with noodles, onion, bok choy, Char Siu Pork and sauce. I remember one time long ago I asked about the color of the noodles and they said they used Dark Soy which is darker and thicker than regular soy.
