Another cheating fast way is to buy a bag of diced Simply Potatoes, boil until tender to your prefefrence, drain let cool then add your other ingredients, you can sometimes catch the bag on sale, I bought on a whim when I was in a hurry to make my usual potato salad, worked for me!

I boil yellow or white new potatoes in their skins, cool and peel them.  The peels just easily come off.  I add mayo, chopped baby dills and a shake or two celery seed and grwond pepper.  Mix it up, top with a bit of paparika.

 

This is the way my mother fixed ps, one of the first things she showed me to make. We didn't add raw onion, none of us cared for raw onion in anything.

 

I have found the red potatoes have eyes that make me feel ill.  I always chose red potatoes for many dishes until learning about solanine in nightshades which affect me with my GI issues.

@geezerette : When I was single. I made potato salad using 3 potatoes that I scrubbed and l left the peel on and boiled. Easier to peel. I boiled two eggs and added my other ingredients. My dinner would be potato salad with saltine crackers and enough for lunch the next day.

I forgot and made this recipe for DH when first married.  He looked at me and stated: Mom made potato salad with a 5 pound bag of potatoes. That must be store made.

OMG @Kachina624,  It is the best!   When my Son lived in Maryland and I would visit we would go to the Armish market, they were only open a couple of days a week. I would head strait for the deli to get their plain potato salad!   I didn't know they had gone Nation wide with it. Hope I can find it here in Southern New England!

@Silver Fox1   it may not be the same product.  The brand is "Amish" and it's in plastic tubs in the refrigerated section.  There are several varieties.  I like the original.
