Boiled dinner for St Patrick's day!

I just picked up all the fixins' to make the once-a-year boiled dinner for St. Patrick's day.  Love having a corned beef sandwich on rye with mustard from the leftovers, with a big, fat, Clausen dill pickle!  Yum!

Sounds good.  I haven't had a corn beef brisket for years.  I just put one on tomorrow's grocery order.  Thanks for mentioning it.

@LdyBugz  LOVE your Monday menu. If I bring some soda bread to contribute my share can I come over to celebrate with you? 

Just in case it doesn't work out for me to visit for dinner, I went out and bought a corned beef similar to yours in the photo (my supermarket was only selling Cook's point cut or flat cut; not my favorite brand--I really like Frierich). I'll have potatoes with my dinner. I have a seeded rye in the house for that leftover sandwich you noted

 

My biggest challenge is the patience it takes to let that corned beef simmer for the hours it needs to be lusciously tender.  I have learned to cut thin slices across the grain. So rich and flavorful.

@Kachina624   I only make it once a year, and just love it.  It does turn into a costly dinner though considering how much that piece of meat shrinks up.  Hope you enjoy yours!

@gizmogal  You are more than welcome to join me!  My market only had the one brand, and it will be fine.  I'm glad it's lower salt.  Some brands are just too salty, and then I swell up like a balloon!  

 

I'll have carrots, cabbage, and red potatoes to go with.  And you're right, it does take patience waiting for it to get done cooking!  Enjoy yours!

@LdyBugz.  I may pressure cook it.  Have you tried that?  I usually simmer on top of the stove.

@Kachina624  I have never used a pressure cooker.  I'll just suffer through the wait and simmer it on the stovetop.  😉

This is defiantley the time to buy them. This time of the year is when the stores put them out at a good price and we ususally buy a few of them. We started early, and made one the other day strictly for Rueben sandwiches with homemade fries. The next one will be cooked in the crock pot with potatoes and cabbage. As someone with mostly Irish heritage, I could eat this almost every day!

@LdyBugz  Love to cook a corned beef once a year to celebrate St. Patricks Day. So good.

 

We cook ours in a crockpot. The pot is oblong to accomodate the corned beef shape. Cabbage quartered, small red potatoes, carrots, beef broth,  and a can of beer. We like to use Fosters beer or a bottle of Quinness Stout.

 

The house smells soooo good while it's cooking.

 

Neither of us are of Irish heritage, but love to celebrate the luck of the Irish. Fun tradition.
