Here it is midNovember in Chicago and my knockouts are full of roses.  Today it will be 60's tomorrow near 70. But maybe flurries this weekend. Should I cut them down and put leaves over them?  I think I just trimmed them last year. I love them. Anyone in my area I'd appreciate advice.

I don't think you need to do anything - knockout roses are pretty much indestructible.  They'll bloom from spring until frost.

The window for pruning has closed. Wait until early spring to prune as you don't want to encourage new growth when cold weather coming. If you want to clip off spent blooms, go for it, but otherwise leave shrubs alone.

Keep watering until you have a hard freeze. Your roses will bounce back from a hard winter, but once they dry out, you're on the losing side of a battle.

It never hurts to put a 3-4 inch layer of mulch around the base to keep the roots warm. Wait until after a hard freeze to do this.

If your roses are in a place that's very windy, a burlap screen is a good idea.

Agree with all @gardensla says. We just pull the spent petals off without clipping them. 

Come spring you can prune back Knockouts to about 18" if desired; by summer's end they will be back at 4' high again.

If you prune now,  you'll encourage new growth which you don't want if the weather is freezing.   Wait til next spring.
