@granddi --My suggestion to prevent the steaming effect from the marinade/liquid is to use paper towels to dry off the meat first---you'd be amazed how well that works--I always dry off any meat I want to grill, fish or poultry too----I do this first than put a little olive oil over top then add the seasonings. I get fantastic grill marks on everything, including veggies too.

I would need some kind of heavy-duty rolling cart to move it outside. But to get it out of the car first I would need a hand truck to get it inside my house.
