Kerstin.  She left at the end of January and got back towards the end of April.  Don't know if she's talked about it much as I don't watch shows that she hosts.

Only when paired w/ Albertio.  I don't find her that way at all when hosting alone.

She outlined it all on her Instagram account with a lot of photos. She talks about her intermittent fasting, reasons for doing it and her posts are religious in nature. She has frequent posts where she is on her boat with the family.

Since it was missionary work she is probably limited to what QVC will let her say on the air.
