@golding76......It was wonderful to see the sun today. Knew if I didn't go to get my hair cut today, it just wouldn't be done before the end of the year. Yes, a new hairdo does lift one's spirits.....
Have had that grilling skillet for some time now. It really does a good job for what I use it for. Can't even remember where I got it.

@ECBG.....Thanks so much for the baking instructions. Will have to try the left over dish in my new slow cooker. That does sound like a delicious dinner.

Well, I have to say my chicken nachos are delicious. Have been eating them while reading and typing.
Made them in the micro on low for about 4 minutes. I had cut up a herb roasted chicken I got the other day, and used the white meat from that for the nachos. Very good, and now I'm full.

I do not usually cook dinner. That said, tonight I am making orecchiette pasta tossed with diced Italian tomatoes, pesto and diced chicken.
Made extra for leftover lunch or dinner later this week.

Tonight was a rather eclectic menu: shrimp cocktail, bacon/cheddar/beer bread, and pineapple upside down cake. Watching football and didn't feel like cooking until it was too late. Had planned to cook pork chops but that will wait until tomorrow.
