@momtochloe And @ECBG- here are the corn and zucchini recipes. On the zucchini recipe, it says you can also use yellow squash. I got them both from Facebook, but haven't made either yet.

I always look forward to having turkey on thanksgiving. That said, no turkey this year. I am traveling to visit family and my sister is serving chicken pot pie from a local restaurant. It's still over a week away, so she will likely change her mind 42 times before then.

@gidfetghThe corn casserole just found on face book was the other poster. Cooks.com is excellent, though and the recipes are stared. Be aware that many coen casseroles have sugar added to them. I DO have a corn souffe that will make you cry and shockingly easy!

Thanks for this @gidgetgh as my go to for corn casseroles is the one with both canned corn and creamed corn and then Jiffy Mix. I will give this one a try, thank you so much for posting it!

@ECBG, thank you sooooo very much for taking the time to share these recipes. Ohhhhh, I'm definitely making that first one! It's got lots of good things in it including the chili sauce. YUM! And really, it's not that hard to make. Speaking of hard, I just finished making Ina Garten's Beef Bourguignon. Hubby had surgery Friday and this was his request. I hadn't made it in forever and thought I'd whup it right out. Turned out to be more involved then I remembered and I AM POOPED! I had arthroscopic knee surgery a month ago so I'm not 100% yet....uh, not even close! Anyway, I gotter done and I know he will enjoy it.
Thanks again for sharing your recipes. I wish you and yours a very Happy Thanksgiving. Hope your meal turns out delicious in every way.

@GCR18 oh my goodness I didn't realize you were coming to my house for Thanksgiving as this sounds just like what I may or may not be planning . . . thanks for the laugh out loud as it's nice to know I am in good company . . . ![]()
But ps, I will be serving turkey for Thanksgiving . . . all bets are off for Christmas as I love making split pea soup from a ham bone but Thanksgiving is a lock.

@gidgetgh The only problem with this recipe is it's TOO small and needs to me made on a turkey roaster to have enough!
I LOVE coffee cake for breakfast (when I allow myself) and I could roll in this! The students rewarmed servings the next day and took home multiple copies because they were afraid they'd lose it!!! Love it with ham, green beans, glazed carrots, and a plate of fresh tomatoes and cucumbers!
I DO use a 3-4 qt casserole for this and the spinach.
Doubles well- check with a tooth pick in the center
Corn Souffle
Preheat oven to 350 degrees
2 Cans high quality Whole Kernel corn, drained
2 cans cream style corn
4 Tbsp. sugar (may be slightly decreased)
4 Tbsp plain flour
4 Tbsp Whipping cream or half and half
4 eggs, beaten
Combine all ingredients
Pour into buttered 3 qt baking dish
Bake 1-1 1/2 hours until golden
Doubles well with a 4 qt baker.
