My brother's family is hosting but I share in the cooking. There are 9 of us.

I'm bringing eggplant parm (niece is a vegetarian). Sausage sourdough bread dressing. A corner is untouched by meat and sectioned off by a scallion. Niece scoops out her portion first.

Roasted sweet potatoes. Apple galettes for dessert. Thinking of another easy dessert that I can make ahead.

@pupwhipped,I'd love to help you out.  It's SO hard to get the green veggies together!  My advanced foods students loved this one and my sons always loved this!  It does take a little pre prep but you can make it the day before and pop it in the oven.  I'd add around 15-20 minutes if it's cold.  Reheats great!

 

Spinach Cheddar Casserole

 

 

3 C Fresh spinach (8 good handfuls) steamed 10 minutes and drained

2 Cans recipe cut tomatoes, drained

1 med -lg onion coursley chopped

1/4 C Heinz Chili Sauce

1 C cracker crumbs from Ritz crackers (not bread crumbs)

1 tsp salt

1/4 tsp paprika

1/2 lb sharp cheddar cheese, grated

1 C real bacon bits

 

Heat Oven to 350 degrees

 

Place 1/2 of the steamed spinach in a deep buttered casserole.

 

Spread 1/2 of the following: chili sauce, tomatoes, onions, salt, pepper, cheese, and cracker crumbs.

 

Repeat ADDING BACON BEFORE ENDING IN CRUMBS

 

Bake 25 minutes.  Enjoy!!!

 

 

 

 

 

This is a spinach quiche that makes it's own crust and is fantastic as a vegetable or main dish.

 

 

 

Crustless Spinach Quiche

 

Preheat oven to 350 degrees

 

1 Tbls. Oil

1 lg. onion, chopped

1 pkg chopped, frozen spinach, all water squeezed out

5 eggs

¾ lbs muenster cheese, grated

Salt, pepper

 

Preheat oven to 350 degrees

Spray pie plate

Heat oil in skillet over med heat

Add onion cook only until clear

Add spinach, cook only until excess moisture is out

Let cool.

Beat eggs in bowl with fork or whisk.

Add cheese, salt, pepper to taste

Stir onion, spinach mixture in.

Pour into pie plate

Bake 40-45 minutes until lightly brown.

@mistriTsquirrel I too am kitchen challenged as I cook with a toaster oven and an induction burner.  As I am by myself, I am still planning a small albeit not very welll prepared meal.  I have followed your challenges with your family and please know I wish you and your family peace not only for the upcoming holiday season but also for the future.  I know that being a family is not always easy but I do wish you all the best as you deserve that and more.


Turkey breasts or several thighs are ultra easy to do in a crock pot if that helps!

Since we are having so many people we may have another dish such as green beans.  Also, the other family will bring something.  She makes great desserts, so that may be what she brings.  In that case, we probably would not have the pumpkin pie.
