@pupwhipped wrote:@ECBG, I hate to ask, and if you don't feel like posting that's absolutely fine. But, your spinach dish with cheese and tomatoes sounds so good. Would you mind telling me how you make it? I'm always looking for a new side dish as I get kinda tired of the same ole ones I make year after year.
Best to you!

@pupwhipped,I'd love to help you out. It's SO hard to get the green veggies together! My advanced foods students loved this one and my sons always loved this! It does take a little pre prep but you can make it the day before and pop it in the oven. I'd add around 15-20 minutes if it's cold. Reheats great!
Spinach Cheddar Casserole
3 C Fresh spinach (8 good handfuls) steamed 10 minutes and drained
2 Cans recipe cut tomatoes, drained
1 med -lg onion coursley chopped

1 C cracker crumbs from Ritz crackers (not bread crumbs)
1 tsp salt
1/4 tsp paprika
1/2 lb sharp cheddar cheese, grated
1 C real bacon bits
Heat Oven to 350 degrees
Place 1/2 of the steamed spinach in a deep buttered casserole.
Spread 1/2 of the following: chili sauce, tomatoes, onions, salt, pepper, cheese, and cracker crumbs.

@bri20 wrote:@Susan Louise, I know a lot of people who have a birthday close to a holiday don't get their own cake. That always made me sad.
Birthdays always warrant a special cake. 😊
@bri20Thank you so much. That was so dear! I'm 10 days after! UGH!

So...nothing special.
I'd like to have turkey, stuffing, mashed potatoes and gravy.
@mistriTsquirrel I too am kitchen challenged as I cook with a toaster oven and an induction burner. As I am by myself, I am still planning a small albeit not very welll prepared meal. I have followed your challenges with your family and please know I wish you and your family peace not only for the upcoming holiday season but also for the future. I know that being a family is not always easy but I do wish you all the best as you deserve that and more.
Turkey breasts or several thighs are ultra easy to do in a crock pot if that helps!

@Nicknack wrote:We're having 17 people for dinner this year so will have both ham and turkey. We don't usually have this many, but my sister invited another family to join us. We have dinner at my sister's house.
Honey Baked ham
turkey
gravy
dressing
cranberry sauce
sweet potato casserole
mashed potatoes
brocolli casserole
deviled eggs
Sister Shubert rolls
pumpkin pie
pecan pie
Since we are having so many people we may have another dish such as green beans. Also, the other family will bring something. She makes great desserts, so that may be what she brings. In that case, we probably would not have the pumpkin pie.
@NickNackThe guys here could OD on Sister Shubert's!
