It's 1/2 cup of mayo, 1/2 cup of sour cream, 1 or 2 chipotles, 1 tbls of adobo sauce, juice from half a lime and salt and pepper. I have a mini Cuisinart and just mix it all up. You can adjust the chipotle to taste.

Me too!! Southwest Texas here and love when the the mom/pop grocery stores start roasting their chiles out in parking lot!! That scent.....I eat the green, roasted chiles with everything during the season! I also freeze some for the winter months! Then Autumn comes and the red chiles for the ristras start showing up everywhere....
