I posted this over in the "Health & Wellness" forum, but haven't gotten any responses, so I thought that I'd try asking you fine ladies here.

I'd like to stick my toe in to vegetarian cooking. I'm looking for a cookbook that has simple, easy recipes.

Any suggestions?

Yuban, I'm positive I saw at least two at Costco. You might want to check there. Also, Amazon will obviously have vegetarian cookbooks but many of them may have the 'click inside' feature where you can browse through a few recipes.

I'm not a vegetarian but my neighbor is and I was looking for something as a gift. Then it dawned on me that she doesn't really cook......

I really like Deborah Madison's Vegetarian Cooking for Everyone, but it may be more comprehensive than what you are looking for. She doesn't use shortcuts or fake meats and things. If you like to really cook, using fresh ingredients, she is a good choice.

Yuban, just a suggestion, but you might try the Kitchen and Food forum. Those ladies over there are very helpful and friendly.

I like Mollie Katzen's vegetarian cookbooks. I started out with The Moosewood Cookbook (Recipes From Moosewood Restaurant, Ithaca, NY), and found it to be really easy. That was the original, but there are now updated versions, too. Here's Amazon's listing for Mollie Katzen's books that might be helpful to you:
