I absolutely love my IP. I used pressure cooker a few times maybe 25 yearBy s ago and wasn't impressed. I had a co-worker who swore by them and decided to give them another try after I retired. After a few months I managed to damage the inner pot and was unable to obtain a replacement. By then I was hooked and bought my IP when Amazon was having a sale. I actually missed a lot of the hype.
I use mine mostly for things that normally take a while such as beans, rice, pot roast, soup, etc. I usually use recipes as a guide when cooking. So I just look up the time for the main ingredient, put whatever in the pot (brown meat/onions in the pot first before adding liquid), set it and forget about it. I don't think I've ever used any of the settings other than brown/saute, manual and the time setting.
A couple of days ago I browned som pork shoulder country style ribs, then sofftened some onion in peanut oil, then added several cloves of garlic (thick sliced), added Pixian doubanjiang bean paste (http://www.chinasichuanfood.com/doubanjiang/), sichuan peppercorns, ginger and dried Chinese red chilis. Stirred that a bit then added some water, the pork and a little bit of dark soy sauce and black vinegar. Turned out amazing, tho next time I'll definitely add more peppers and peppercorns.

I wouldn't mind one as long as it has a food grade stainless steel liner/lining/pot inside. I just don't trust the (allegedly possibly foreign) materials used in various non-stick items. But, that's 'just me'. Lots of good luck to IP and other brands' users. Enjoy!

They do have a Stainless Steel liner and Removable, to boot! 👍
In fact, that's what set Instant Pot apart from the other electric pressure cookers. No way I would use teflon in a pressure cooker. I'm sure with their success, you'll begin to see other brands adopting the stainless steel liners.

I own two Instant Pots. They're used multiple times a week for various dishes that my family requests regularly. I used to have the oval cook's essential PC. It worked well, but I had a brain fart moment and wound up melting the lid with the hot air vent of my oven. Even though I really did like the CE machine, I only used it for refried beans. I use the IP for roasts, chickens, eggs, cheesecakes, ribs, potatoes, yogurt, rice, and more. My husband, who is loath to add more gadgets to our kitchen bought the second IP within a week of us having the first.
