I'd also keep an eye out for something you can do for him or his family. Pet/house watching, picking up mail when they're gone, watering plants, things that would be helpful to him and that you could manage.
You're very fortunate to have such a considerate neighbor. There are some around, just don't seem to be as many as there used to be.

A simple thanks is enough but I know exactly how you are feeling. My neighbor helped me with a dead car battery several years ago and I bought them a Thsnk you" Publix cake. (Note~ I have since bought a Halo charger so I can now do this by myself....and have!) 😃

I would want to return the favor too, but keep your eyes and ears open, a time might come when it would be appropriate for a neighbor to help a neighbor. Thinking backed goods too.

One other thought - if he has a wife and kids, do something for them. That would acknowledge the time dad/husband isn't there and also would make this kind gentleman happy because you made his family happy. Win all around.

@Biftu I guess my thought is saying 'thank you' is the way to go; with the notion, too, that perhaps someday he'll need some help with something that you, also being a good neighbor, will be able to provide. Good neighbors are so valuable and on many different levels. What a nice guy!

Wonderful story - thank you for telling us! I sometimes wonder if there are any "nice" people left in our world and always happy to hear there are.
Just me, but I feel some tangible "thank you" is appropriate. Maybe a gift card for pizza? or muffins from the grocery store? Something small.

Years ago I would shovel my neighbor's driveway. She was still working but nearing retirement (also continued to shovel after she retired) and her husband had died a few years before.
I had stopped working because I had my son. So I was home all day. I did not want any money for shoveling. I wanted to have her not worry about walking on snow and ice. She had enough to deal with and I wanted her to have one less thing to worry about.
@Biftu I would take your neighbor at his word. He is taking it upon himself to shovel your driveway because he cares about his neighbor and he wants the satisfaction that he was able to help you.
