Due to being cured in salt the gray  can sometimes be too salty to the taste if you do not "throw the water off" at least once during cooking. My mom and grandparents would taste a tiny piece to see if it was mild enough or if the water needed to be changed again.  A little more work, but IMO the more flavorful taste and the lack of nitrites make it worthwhile.

BTW....I LOVE a good brisket sandwich or dinner at an authentic Jewish deli!

oh yes @781Florist i know that both are brisket. the red one we call corned beef. the "gray one" we just call it a brisket." 

love them both, but really LOVE corned beef. i bought some good corned beef and pastrami today for our lunches for the next few days.
