With the understanding that pigs did indeed start to fly....I would choose to be a vendor.  That gives me some amount of control and ownership of the presentation.

Host?  Some things can be interesting, but I could never muster convincing enthusiasm to host presentations for a sponge, mop & bucket, or some shoes that will remain nameless.

Model?  Sometimes the vendors, and hosts can treat the models as if they are truly just mannequins; and don't get me started on how the stylists cloth them sometimes.

I think it would be fun to be a vendor.  I could muster up excitement and talk about something for a while, but not nearly as long as the hosts do.  I'm too antsy to be a model and be required to just sit (jewelry, beauty) or stand (fashion) for long periods of time.
