I make one at a time. My pound cakes some time have a gooey or gummy section in the center or on top. I woke up at 5:30 watching pound cake videos on what to do to prevent several common problems. Realize my stand mixer has 100 more watts than my old one. I made notes to reduce speed and mixing time when creaming the butter, sugar, cream cheese and adding the eggs and flour. I also reduced the oven temperature to 325 since I have a dark and non- stick tube pan. I am worn out and disappointed. I cut one of the loaves that was pitiful looking and it had gummy spots. DH said still tasted good. I don't know what to do. I didn't get out of the kitchen until after 2. Have two loaves that are still warm and waiting for them to cool and put in the freezer. My results:

i know how u feel
when i have made chiffon cake which uses veg oil
it sometimes not incorporated or emulsified or whatever
and the middle is wet - not baked through - top is brown enough - sigh
i tried making focaccia the other day and wanted to surprise my friend w/few pieces
after mixing - it felt tough and not billowy and sticky - i decided to wait after 1st rise
it did NOT rise where it should -
i swore i thought i did NOT overmix - but it says if tough dough - OVERMIX
i dumped the 5 cups of flour and 1 cup of olive oil
in the past i would have baked it - eaten it - not horrible but just not quite right
but since i was gifting friend - i decided to dump
it broke my heart bc that was a lot of waste
i could have baked it and eaten it myself -.... but with my want/need to lose weight
😢
i hope the others come out fine
i know us as bakers or cooks know how it should be
while others consuming may never know the difference
dont beat urself up - i know it is very frustrating and upsetting

@Yahooey : Totally agree and understand. Not fun to put so much time and effort in some thing and not get the preferred results. SIL and BIL said they would accept any of my so called baking failures. That cake is expensive to make. I used 1 1/2 boxes of cake flour, 18 eggs, 3 cream cheese and 9 cups of sugar. Next project!??

I'm sorry about the pound cakes and the focaccia.
If you decreased the oven temp, maybe adjusting the baking time would help.
No matter how many times we make something, you really never know how it's going to come out, especially if you're giving it to someone 💗

I ordered the Roberta's cala lily TSV - 8 assorted bulbs and they came late April - planted - waited - nada - waited more and then contacted them and asked how long does it take to see some shoots - 2 weeks - i waited over a month so they send me 8 more bulbs - 1 was labeled black and another orage and the rest was jumbled in a bag - i now have 3 purple/black? 2 orange / 2 yellow and 1 the squirrel took it away
i'm just glad something came up - the leaves of the orange has a splash of color - the leaves of the yellow has white speckles - i didnt know the leaves would be diff - they need to be dug up and replanted in the spring - unless the squirrels take it away
they are a turning - 🤫 dont tell the critters

ur cake used a lot of expensive ingredients -
if only a few spots - not so bad - what did u decide to do?
of course ur pancake would be more than happy to take away ur bake failures
always avail for free food - not to worry urself
