Hope you don't lose your electricity!

 

I Have a few battery operated candles i use  if after dark if i lose mine plus keep flashlights in every room! 

 

So far it doesn't happen very often...but like you ...what if cell phone isn't charged enough  what to do???What to buy..i see so many offers on different options...and yet haven't bought anything..hoping someone in family will...lol

called my son..and we will be going to check out that upright 3.0 freezer Satuday morning...he has a pickup truck and a dolly...plus his son will be home to help get itnto my house...if i buy it.Smiley Very Happy

@dooBdoo : Thank you. We had thunderstorms today but no loss of power. I am also researching a small power station because DH uses a bipap  machine, and for  the  tablet and small lamp.

I am also praying for Hawaii and anyone dealing with so many emergencies.🤗❤🙏🏼🙏🏼🙏🏼🙏🏼

Good Morning Friends...well now it's afternoon.

 

I'm still stuck in the morning because when I got up I wasn't hungry so I skipped breakfast and started making eggplant parmigiana.

 

It's not hard,  but the breading of the eggplant gets tedious with the dipping in the 3 different bowls.

 

The egg wash, the flour, and then breadcrumbs. the more you make, the more of a pain in the...well you know! 


These days I have been air frying the eggplant discs in the oven type airfryer. It's much faster and easier than the old days. I use the spray olive oil and lightly spray the top to give it an even crisp.

It amazes me how much easier, faster and way less oil these days. 

I layer it in a pan with sauce, capers and cheese and put it back in the airfryer to finish it off.

 

This is one of my favorite dishes of all time.  When I was pregnant with my children, I craved it constantly. That and an Entennmans Metropolitan cake. 😂 

 

My mom makes it differently in a Sicilian style that is not breaded, uses a lumpy marinara, capers and grated hard cheese not mozzarella.

I like it that way too it has a whole different flavor to it.

 

We will enjoy it for lunch in about an hour or so. 

Oh, and at times we like to eat it cold as well!

 

What is anyone else cooking today, if you are cooking. Or where will you be going to have a meal today?

 

@cowboy sam  Do you refer to Walmart as Wally? I read you went to Wally the other day. I never heard anyone around here call it that. 😂

 

As a matter of fact in NYC there is no Walmart that I know of.  We have to go to Long Island, New Jersey or start heading upstate NY to  find one.

 

I haven't been there since before the pandemic. But I love it. It's a treat for me! 😝 The ones that are right through the tunnels and bridges are ridiculously crowded and my husband hates to go there, for that reason!

yes..wally...is short for Walmart!

But when i am there its like i have blinders on...get groeries,etc...and check out.

I don't look at clothes,shoes,plants,appliances,etc.

 

Your eggplant sounds good...i used to do fried green tomatoes...

.flour  then,dip in.out,coat with flour  and deep fry them in hot grease until crust is just right..but not burnt....lol

I also hate shopping when crowded w/shoppers!

Son..like the 3.0cubic foot white freezer  and i bought it,so

its now home and plugged in!

It is a Energy star usage one.Its placed on my floor and getting cold.

 

We agreeded the 6.3 cubic freezer was too big of one for me.

 

So Monday...i will walk to grc. store and buy just food to put in it  as my fridg/freezer is full.

Thanks for your input/advice...it helped me decide.the right one for me.🤗
