If I didn't care for it I would definitely tell you. I am just so glad you told me about these because it really gives me a lot more meal options. I took some to work with me yesterday and one of my friends tried some and she really liked it too. I didn't feel disgusted while eating for once. I am so glad you told me about this and I cannot wait for tacos. Tonight I am making a vegetarian sandwich with Portobello mushrooms, red onions, roasted red peppers, asparagus and jalapeno jack cheese on like a Cuban bread Panini. I roasted all the veggies in the oven with a little oil, sea salt and garlic prior to building the paninis. Thanks again HisElk!!

I sure will let you know, I had something similar and a restaurant and wanted to try to do it myself. I will let you know about the tacos too, do you just add taco like seasoning to the crumbles to make yours?

Yes, just mix in the taco seasoning mix to the crumbles. We get the whole wheat soft taco shells but you can also use the 'crunchy' ones if you like. We add the romaine lettuce and other green leafy veggies, along with fresh chopped tomatoes, some salsa (we get the medium spicy) along with some cheddar cheese and light sour cream (I don't use much). If you want extra spicy, we add some jalapenos.

Hey HisElk, I just wanted to let you know about my veggie sandwich I made last night. I sliced up portabello mushrooms, thick slices of red onions, asparagus, red peppers and tomatoes and I put them in the oven with a little olive oil, sea salt, pepper and chopped garlic and roasted all of them. Then I took some Cuban bread and brushed the inside with a little homemade Italian dressing. I assembled the sandwiches with a little bit of pepper jack cheese and cooked on a Panini press. I took some of the Italian dressing and put it in a ramekin for dipping. We had the sandwiches with some quinoa and spinach sautéed in a little bit of butter, olive oil, salt and pepper. The sandwich came out SO great. I just loved it. My daughter and son in law ate over here last night and they really raved about it. My daughter is the type that has to have some sort of meat for dinner or else she complains that she is hungry in no time. She said that wasn't the case and they both really went on and on about how good it was. I got the idea for the sandwich from a restaurant called Bahama Breeze that I go to once in a while. It was better than the one I had there.
I am just a huge fan of roasting vegetables, it just brings out the best flavors IMO. I cooked the quinoa and then added black beans, diced tomatoes, garlic, sea salt, cilantro, squeezed lemon and added the zest. I love it like that. It is so flavorful. In the morning I also eat quinoa with yogurt and fruit. I didn't mean that I add the quinoa with the beans, lemon and cilantro to yogurt and fruit just the plain quinoa (cooked with lemons in the water) fruit and yogurt. Lol... didn't want to confuse you.
Anyway, I just wanted to let you know how that came out. Hope you had a great day today and it is warming up in your area. It is supposed to be in the 60's here this weekend.
