@SloopJohnB I thought the same thing this morning. I always buy my eggs from my friend. Her chickens, a nice variety of different breeds, are free range and their eggs are not quite white but more of a brownish-tan in appearance. (The free range eggs also have brighter yolks.) Dh usually buys eggs at the local grocery store cuz he only wants white eggs.

Today my egg supply was used up so I took a white egg from dh's carton and even tho it was labeled "Large" the egg was definitely more like a medium or small size.

I read that one large egg should be 1/4 c. when used. I have noticed eggs getting smaller for several years. I have been measuring eggs for baking for quite sometime. The 1/4 c. measurement seems to be accurate. I have used this amount for several years now. At first, eggs didn't really look that much smaller. Now days, the eggs sold as large often require almost an entire extra egg to reach 1/4 c.

Eggs that are not fresh allow the egg white to evaporate if stored in a cardboard carton. I always check the amount if the egg isn't fresh. They're still good for baking, just smaller. I hope this information helps someone.

i generally only buy XL or JUMBOS.

these sizes dont seem any smaller to me.

i often get double yolks in my jumbos.

eggs are definitely a bargain protein, no matter what size.

Support your local farmer! Buy direct and leave the shrinking eggs at the store! You'll get a much better product and will help local farmers out. Chicken feed doesn't come cheap and egg size and color are determined by the breed, I'm sure the big companies producing eggs have figured out how to produce a smaller egg with less feed to increase profits.

@taquito What an interesting discussion. I have also noticed shrinkage in most items and the cost rising.

Regarding eggs, I can only digest the ones known as Happy Eggs which are organic and "happy" outdoor free range chickens.

All other eggs is an instant bad almost regurgitation. sorry if TMI. So I'm willing to pay over $5-- for a dozen large beautiful eggs. We don't eat eggs every day.

Funny, the ice cream containers were the first thing I noticed shrinking too! I was actually quite shocked at the time and refused to buy. Didn't change a thing. ha!
