I thought it was expensive since it's wrapped in pork belly with all that fat so how much of it is edible besides the center small pork?

Making porchetta is an all day job and there is no waste.  Pork belly is where bacon comes from.  That can't be bad.

Martha Stewart hand-feeding hogs????  No way!  Been there, done that on my grandparents farm in Michigan as a kid and teenager and I'm tellin' you she would assign that to some farm hand making minimum wage.
