I love Thanksgiving meal leftovers.  That being said we haven't had Turkey on every Thanksgiving either.  You are free to make whatever you want,  one year we grilled Steaks.

About 10 years ago the men in our family, who all love turkey still wanted another meat served.  We switch back and forth between steaks and brisket.  I always eat a little of what was on the grill outside but the turkey is my passion.  (The men are the ones responsible for cooking the second meat.)

I usually cook a 20 lb. turkey for my children, grandchildren and great grandchildren, 11 of them give or take.  They eat the meal on Thursday, come back on Friday for whatever is left over and that's the end of the bird.Woman LOL

The only thing we'd have to add is mashed potatoes and corn casserole @RedTop . Desserts aren't necessary.

i use as much as i can of the turkey and the carcass.

 

i simmer the carcass so that i can get a great flavorful broth. i then freeze it into small containers for when i make soups......love turkey barley soup, turkey noodle soup, and i found a new recipe for turkey and wild rice soup.

 

we eat the meat for sandwiches. we eat the turkey the same way the next day......thanksgiving #2!. some of us like a grilled turkey/brie sandwich topped with homemade cranberry sauce. turkey tetrazinni. a turkey hot brown sandwich (brown hotel, louisville).

 

i also freeze some of the leftover turkey for soups or casseroles.

 

i have even made turkey chili before.

We make turkey soup and turkey tetrazzini. Eat some freeze the rest.  Of course some sandwiches and mini Thanksgiving dinner with all the leftovers.

I love mashed potatoes; nice firm potatoes with butter, salt, pepper, and a very small amount of milk.  I can eat mashed potatoes any time of day or night, all by themselves or with something else.   

Mashed potatoes and other vegetables used to have a place on our table for Thanksgiving, but then my family decided they didn't want a feast; they just wanted a lot of their favorite foods.   If you noticed, there's no bread with our meal either.
