A gritty desert wedding doesn't really appeal to me probably because I know there's a lot of dirt mixed with that sand and insects and pieces of weeds.  There is often wind to be taken into consideration, and you can feel the grit from that on your face and in your mouth.  Where to have the reception?   Deserts are usually miles off the beaten path.  Oh, and they're often hotter than hades, like 120°.

They say they're going to be the latest thing.  We'll see.

It's the bride and groom's wedding, so they should have it at whatever venue they prefer (it's their day).  While it's not my cup of tea, I would attend a wedding in the desert for a loved one or close friend.
