What amazed me a few years ago was the blind man who was on and, I think, won. He had to keep track of all the categories, and which ones had been answered, in his head.

Sometimes I also wonder, as a previous poster did, "How can anyone know this stuff!". Some days I know more than others, but I think nervousness would play a big part too.

The exam I took to get into grad school was the Miller's Analogy test. When I was studying for that, I definitely could have been a contender on Jeopardy. I remember watching the show at that time and doing pretty well. I think it's not just knowing the answers, but being able to make educated guesses from the clues for each question, and thinking quickly on your feet. You may know all the answers, but if you're not fast, you'll never get anywhere.
