Re: Christmas in July for Toni

[ Edited ]

@SportyShorty07     Here is the Jordan Marsh Blueberry  Muffin  recipe. Jordan Marsh was a lovely department store in Boston and we had two more stores at our local malls. They sold out to Macy's and they can not compare to the elegant Jordan Marsh.

They had a bakery and their blueberry muffins were famous and so delicious.

I acquired the recipe in the 1970's.

                             Blueberry Muffins   makes 2 dozen

Preheat oven to 350 degrees.  I use paper cupcake liners so there is no need to grease pans.

2 1/2 cups of large blueberries   (take 1/2 cup of berries and

                                                      mash & strain them)

1/2 cup milk

2 eggs

1 stick of softened butter

1 1/4 cup sugar

2 cups flour

2 tsp. baking powder

1/4 tsp.salt

Cream butter and sugar until fluffy. Add eggs, one at a time.

Sift dry ingredients together and add alternately with milk,

to butter and sugar mixture. Add the 2 cups of blueberries, then

add the 1/2 cup of mashed blueberries.

Bake at 350 for 25-30 minutes. Sprinkle sugar on top of muffins.   Remove from pans and cool on rack.

If you wash berries just before making muffins, be sure to dry them on paper towels. If they are wet, they will all sink to

the bottom of muffins.

You can use small berries, but the large ones will be juicier

and more like the original muffins.  Enjoy

Re: Christmas in July for Toni

@Enufstuff @Love Toni's jingle bell skirt.  My favorite time of year.

I love your stories that go with each outfit.  Looking forward to summer dresses.  My grandparents had a farm, and I spent a week there with family every summer.  Lots of great memories.  The farm is long gone, and I have not been back to Wisconsin since my grandmothers passing in early 2000's.  So many wonderful memories.. They had cattle and chickens.  We loved going there.

Thank you also for the muffin recipe, I'm going to make this week.  We didn't have a Jordan Marsh, but had Gimbels, Kaufmann's and Joseph Horne's.  All gone.  Kaufman's was last to go, and was sold to Macys.  Joseph Horne's was the upscale department store here.  Loved all three stores though.
