I've heard they work well with high heat and I don't think you have to add a lot of fat to get something crisp.

Just saw and ordered the HSN Chef Ming special, a ceramic pan, some special core, copper color inside, 9" for $29.95, free shipping.

I'm looking forward to trying it out. Any advice?
