Breakfast for dinner was a special treat when we were kids. I did it for my kids about once a week, we all loved it. I loved it because my husband did the cooking...lol He loves to make breakfast food. It's the two of us now and we are both eating healthy so, pancakes and sausages and scrambled eggs and muffins aren't part of the plan now.

Love having leftover vegetables heating up in a pan and scrambling eggs to pour on top. Maybe a touch of salsa makes for a delightful, healthy dinner. Quick and easy too.

I love breakfast for dinner. I have it maybe a couple of times a month. I love to fix scrambled eggs with cheese and have it with good ole' southern grits (with butter only), turkey bacon and slices of tomato....no bread (don't eat much bread)....woo hoo! Okay, now I'm hungry like a wolf, lol.....

If you like scrambled eggs, the American Heart Association is saying they are good for us in moderation. Two eggs twice a week is fine, they say.
DH makes ground turkey sausage patties with spices etc. for us every so often. If you make them yourself you can keep them healthy.

Eggs are great source of protein, I have a boiled egg 2-3 times a week, either for breakfast or as a snack with fruit. Funny that you mention the veggie sausage patties, I have some in the freezer. I haven't tried them yet, I think because I haven't eaten bread in over a year and my mind links sausages with toast. I have a recipe for cauliflower cloud bread. Perhaps next Sunday, I'll have that with the veggie sausages and a boiled egg. The turkey sausages would work too, you're lucky that your hubby makes his own sausages....you know exactly what you are getting.

Since DH travels for work, he is not always home for dinner. If he calls me at 5 pm to tell me that he is on his way home, breakfast for dinner is the norm.
We just had it last night. Buttermilk waffles (the only way that I can seem to use up the buttermilk), scrambled eggs, and crispy bacon. One of my favorite meals.
