@BeccaLou   My mother made vegetable sandwiches for my lunch as a kid and they are still my favorite.  I now use my homemade potato, homemade wheat or homemade pumpernickel bread, sliced carrots, radishes, celery, lettuce, lite mayo and freshly ground pepper. Will have for dinner.

Vietnamese banh mi! It has grilled pork, pickled carrots and daikon, cilantro, and jalapeno peppers on a fresh French baguette. I love the contrast of flavors and textures.

I also don't eat a lot of sandwiches, but I like a chicken salad with grapes or cranberries and walnuts wrap.  I also like soft scrambled eggs on a toasted buttered ciabatta roll. Yum Yum!
