๐Ÿ… Best Lunch ๐Ÿ…

I stopped by the farm stand this AM. after grocery shopping , and bought my first fresh tomatoes. Lunch today was sliced tomatoes, yum, and rotisserie chicken, butter lettuce, and a ciabatta roll.  Fresh veggies are my favorite part of summer.๐Ÿ…

Best Lunch:  Thick sliced home grown tomato sprinkled with salt and pepper on plain white bread slathered with mayonnaise eaten over a sink to catch the drippings.

What is good for the goose today will also be good for the gander tomorrow.

And there is something about cottage cheese, eaten straight from the carton, over the kitchen sink, that makes it taste better to me too! LOL

The only thing I love more than a good tomato sandwich is to add bacon and lettuce for a BLT!

Iโ€™m not a fan of mayo, and sadly bacon isnโ€™t in my diet anymore , but I used to love a BLT

I really don't feel like cooking or eating heavy things in the summer, so I have been eating lots of caprese salads.

 

We have wonderful farmer's markets in the area and the tomatoes right now are so delicious.

 

The great fruits and vegetables out now are my favorite part of summer!

I make a crab salad that is equally yummy as a sandwich filling or on top of a bed of lettuce.

Our garden tomatoes are finally ripe enough to start picking.  Nothing tastes better to me than a fresh picked one with some sea salt and pepper.  I just wish we could get good tomatoes all year round.  I eat them day and night for about a month starting in August and then have to wait another year to have a good one!

OK, this is a lunch I have when I am feeling a bit down and it fills me up where I can skip dinner. I have it a few times a year because it is probably minimum about 1200 calories.

 

We have a deli near us that makes the best food ever. I love their turkey burgers (seasoned to perfection) on a brioche roll with french fries, cole slaw and pickles with onion and fresh tomatoes. The fries are not ordinary fries but dipped in flour first before frying. Their cole slaw is like none other and isn't too sweet.
