To sum it up:
1) You can go by what sounds right and "comfortable" to your ear in most cases. The link provides exceptions.
2) In many/most cases, you can either leave "that" in or take it out. It would be grammatically correct either way.
While the first sentence in my OP is grammatically correct, three "thats" in one sentence is definitely unnecessary and a bit much for the ears.
I'm in the process of paring down my "thats." Thank you to everyone for the "that" intervention!
