Advice for Disney World Trip

My hubby & I are planning on going to Disney World & Sea World for our upcoming anniversary. All the Disney sites have boggled my mind about what to do, where to stay, etc. so I thought I'd ask here and see if anyone had some suggestions. We're planning on going Sept. 8 - 12th. Also has anyone taken a hot air balloon ride? It's something I've always wanted to do but haven't actually found anyone who has been before. Any thoughts or impressions? Thanks for everyone's help.
